Millionaires Shortbread

Well, this was an unplanned indulgent treat! Apparently I can’t have a day off now without doing some baking, especially when a can of condensed milk had been in the cupboard for the last few months and seeing these being made on bake off.

I used the recipe from Jane’s patisserie (shock) and I really liked it. It didn’t seem too complicated and actually didn’t have as many ingredients as I had assumed.

My main concern was making the caramel. I did it on the hob which was a challenge in itself as I have an induction hob which is a nightmare to get the right temperature. I used the spatula to stir which really help the mixture not catch on the bottom. It was going well until I decided to increase the temperate for a split second and of course this resulted in a small amount catching. Despite that it still seemed to turn out well and had the right thickness to layer on the shortbread base.

I enjoyed covering the top with milk chocolate and swirling the white chocolate through to make the marble affect which turned out great once set!

Once it has set in the fridge for a few hours, I held my breath as I cut through the layers and was relieved when it held its form and you could see the 3 clear layers. I definitely want to try this again to perfect it but also so I can eat it again as it tastes AMAZING!! 🤎
