Happy New Year!

It’s finally 2021! I think we will all be entering this year very cautiously... don’t touch anything!!!

Obviously baking was a great hobby I discovered in 2020 and I really hope to continue it throughout this year.

My plan at the moment is to pick 3 different bakes each month and get you all to vote on what you would like me to bake. I’m looking forward to see how this will get me out of my comfort zone and hopefully (covid depending) get people tasting some of my bakes!

To kick off the new year I wanted a tasty treat for New Year’s Day, not that I needed to eat anymore food, so I decide to bake mini tarts. At first I wanted to bake a lemon tart but typically my lemon juice was out of date and the last thing I wanted was to enter 2021 with a dodge tummy so I settled with using up my chocolate.

The pastry went well with me following my gut and cooking it for longer to make sure it was golden brown.

My first batch of chocolate ganache was awful which I think was because the boiling water touched the bowl, big no no. After that I decided to melt the chocolate in the microwave which worked better.

It set nicely in the fridge and was deliciously sweet, especially with a bit of cream but I want to work on trying to get the edges of the tart looking neater in the future.

Can’t wait for my next bake 🤎
