Slice slice baby

I have a small confession to make. When I saw the choices for this weeks bake, I remembered that I froze some rough puff pastry which I had left over from my pasties (best week) which needed using up so it made sense to bake the custard slices with my “what I prepared earlier” pastry.

Having never made crème pâtissière or anything similar, I felt quite apprehensive about getting the custard to set and having a disaster like Laura did in the final.

The techniques involved in baking still amaze me and my geeky side comes out. How can heated milk then mixed with a few extra ingredients turn into this silky smooth creamy goodness?

Now I’d like to say the assembling was plain sailing but that would be a complete lie. Trying to cut the cooked pastry to the right size turned out to be a nightmare, plus hoping and praying the custard would set involved lots of pacing around the kitchen and checking the fridge. I was quite happy with the icing and chocolate decoration however when it came to cutting the slices, most of that seemed to fall away.

Although the custard didn’t set as well as it should, and being nearly impossible to eat without getting into a big mess, it tasted AMAZING and is by far one of the tastiest things I’ve baked yet 🤎
