Coconut macaroons


 

First confession- I hate coconut! The smell, the taste and the texture is just not for me!! 

Last confession- I loved baking something that I wouldn’t have to test my will power in order to  leave some for other people to enjoy! 



I couldn’t get all the ingredients for Prue’s recipe so I did find a simplified version online which seemed good enough. I always love seeing the effect on egg whites and sugar when whisked, even more so whilst I drink my cup of coffee and the mixer does all the hard work.



Folding the coconut into the egg white and delicately spooning the mixture onto the parchment paper was my favourite part! It was so light, fluffy and placing the chocolate into the middle felt like I was sneaking in a little delicious surprise for the lucky taster. 

I would have liked them to have had more height and slightly rougher edges but the reviews so far have been good ones 🤎
