Hot weather and baking don’t mix 🥵 I was wracking my brain to think about something small I could try that wouldn’t melt in the next few days and after lots of googling and a drunk conversation with a friend I settled on jam tarts.
Note to self- always check the jam, especially if you haven’t used it in a while.
After an emergency trip to co-op, I started on the pastry and I really enjoyed getting my hands stuck in rather than using the mixer. Actually feeling the butter and flour become like breadcrumbs made it much easier to decide when it was ready. The pastry was much better than the shortbread I did last time however I think my cupcake tray was slightly too big so the tarts were shallower than I would have liked.
I’m definitely learning to trust my gut as I had no idea how long to leave them to bake, “cook until baked” is the worst instruction ever. I am pleased to say... no soggy bottom, Mary Berry would be proud 🤎
