Keep calm and picnic on...part 2
I also made focaccia for the picnic which is something I have wanted to try for a while as I do really enjoy baking bread.
I used the red onion and rosemary recipe from the good food website which was really simple and easy to follow. I didn’t use the mixer for this and kneaded by hand which I did prefer as it’s so much easier to feel the texture of the dough and to know when to stop. I wasn’t sure it had proved enough as the kitchen wasn’t too warm but I went with my gut and carry on through. The recipe required 2 large onions and I definitely didn’t need that much but the onion and rosemary with the olive oil smelt incredible once cooked. I felt maybe I could have left it in the oven for a few minutes longer but I really didn’t want it to dry out so didn’t risk it.
Once I cut through it, I was really chuffed with the lightness and seeing all the air pockets visible which shows it had proved and baked well!
