Sweet Sugary Shortbreads
I hadn’t planned on doing any baking today but with the weather being so crappy I felt I needed something to keep me busy.
My dad bakes the best shortbreads and he had shared his recipe with me and my sisters a few weeks ago so I thought I’d give it a try.
I didn’t have enough of all the ingredients so made a smaller batch but managed to put too much caster sugar in 🤦🏻♀️. After trying to correct my error and mixing the ingredients together, I was really unsure if I had the right texture. I haven’t made shortbread before or even a biscuit for a very long time and when I tried to roll it out it was very crumbly and I struggled with it. I eventually managed to roll it out and cut it the shapes with a glass (I definitely need to invest in more baking equipment) and ultimately felt they looked ok.

I sat watching them like a hawk for the 15-20 minutes before taking them out. Something I have learnt over the last few weeks is that opening the oven door is not enough to tell if it’s done, only once you have taken them out you can really see if they are the right colour. I think maybe I could have taken them out a bit sooner as they were quite brown but once I put the caster sugar on top I was chuffed with my first attempt of shortbreads 🤎
